Uncle Bob Cookies

This recipe comes to us from Bob Spears (aka. “Uncle Bob”), a 6′ 6″ health nut from Palo Alto, CA. These are THE COOKIES we’ve had at our Superior Vistas Bike Tour Aid Station for the last 2 years in a row and posted here by popular demand!

Uncle Bob’s Yummy Oatmeal Choc Chip Cookies

Sift together in a large bowl:

2 ½ cups white flour
2 cups whole wheat flour
1 tablespoon baking soda
1 tablespoon salt


6 cups rolled oats

Mix and set aside.

Then, in a very large bowl, mix together…

2 ¼ cups brown sugar
2 ¼ cups sugar

Add to that:

5 cups chopped almonds
3 cups canola oil
6 eggs
2 tablespoons of vanilla extract
4 cups chocolate chips

Mix well.

Add dry ingredients to wet ingredients and mix.

Bake at 350°F for 10-12 minutes. Full recipe makes about 100 cookies, freeze well in ziplock bags.

The Swan’s Slightly More Sinful Version (½ Recipe):

Cut all measurements by half. (So, instead of 2 cups whole flour, it’s just 1 cup, etc.)

Replace ½ of choc chip cookies with mixture of Reese’s peanut chips and Butterscotch chips.
Add ½ cup dried cherries.
Add ½ tablespoon of baking powder.

Follow all mixing and baking directions above. Makes about 40 cookies, depending on size.

    What is the measurement for the oil? 3 – ?

    Whoops! Sorry about that. It’s 3 cups of oil. I’ll change the recipe to reflect that. Thanks!
